Bench top firmware updates

Can I update the D-180 firmware on the bench if I build a harness with a connector that only has the serial connections and power to the unit?

Same for the HS-34?

Yep... I've done it before for my D100. Nothing special about it - all you need is 5 wires:
Power and Ground to power supply,
Tx, Rx and Data Ground to PC.

And if you have a remote compass module, make sure that is connected to the EFIS too!

As for the HS-34, I don't have any experience as I don't own one...
