RV8 with I0360. 21 gal. for each tank. D-180 installed. Standard Vans supplied float type senders.

I am getting ready to calibrate my fuel levels on the 180. I think the wording is "add a known amount". I understand I need to do this several times but, how much? 1 gal? 2 gal? 5 Gal? or does it matter?

On the Skyview I just used a reasonable amount. For your tanks I would use 2 gallons at a time. Easy to measure and you will get ten calibration points.

There are several discussions on this forum about fuel calibration.

Your D180 will actually ask you for a particular amount based on how big you tell it the tank is initially - usually 1 or 2 gals increments for most airplanes. I think it's 1 gallon for 10-20 gal tanks, and 2 gals for 20-something gallon tanks. You can "lie" to the D180 if you want to coax it into using a certain increment. Once it determines the increment it asks for, it doesn't use the tank size number you gave it ever again. So you can start a cal, give it a tank size number, and then cancel if it's not the fill increment number you want to use.
