I have an OAT probe (two wire type) connected to my D180 and I tried to test the accuracy of the readings. Dipping into a drilled out hole in a block of ice got exact zero degrees centigrade but dipping it boiling water got only up to about 66 degrees.

Is this a problem with the probe or a limitation of the dynon.

Yes, 66 is as high as the OAT can read. It is optimized for air temperatures, which are more in the -40 to +50 deg C range.
