Is it possible to connect the serial out from the grand rapids eis 4000 to the d100 so I can display graphical engine data?

No. Engine data can only be displayed on an EFIS-D100 if a Dynon Avionics EMS-D10, EMS-D120, or FlightDEK-D180 is networked to the EFIS-D100.
