I see a lot of discussion about sending flight plans to and from Foreflight, but should I be seeing a track log from Skyview in my Foreflight track logs? With the Sentry I see one that automatically shows up. I'm not seeing one showing Dynon as a source, even though I was connected via wifi, saw it in "devices", and auto-track-log-recording was turned on.
does Foreflight create track logs from Skyview?

There is a lot of good info on track logs in the current ForeFlight Mobile Pilot's Guide (linked below), beginning on page 573. See page 578 for required equipment and selecting the GPS source. Also note on page 634, the section discussing when GPS data is available from multiple sources.
You need to tell FF to use the SkyView as the GPS source. Choose "Devices", then "SkyView":
And toggle "Use As GPS" to ON (in the screenshot below, it is shown OFF):
