After reading the information in both the D10 EFIS and D10 EMS I'm not clear on the purpose of the DSAB. With just those two instruments what does it give me to connect the pair of wires between them?

In short, it lets them share information to allow you to display one display's information on the other (ie, you can show the EFIS display on the EMS and vice versa). But more pertinent to what you're doing, it also allows a few things like OAT and GPS information to be used by the other display so that you don't need to install two OATs or connect a GPS to each display individually.
