I finally got around to editing the engine stuff today, followed the manual and everything is going pretty well with some experience and reading.
One thing I did NOT find was how to ADD things, like for instance I need two fuel pressure readings. How do I add the second one to the display? A reference or instructions would be appreciated.

Don:

Assuming you're going to use the same type of fuel pressure sensor (Kavlico 5, 15, or 50 PSI),
Part 1 of 3:
1a. Select which General Purpose Input you're going to use for the second fuel pressure sensor... say Pin 9 which is General Purpose Input 5, Brown w/Blue Stripe
1b. SETUP MENU > EMS SETUP > SENSOR INPUT MAPPING > (one more right click)
1c. C37 P9...
FUNCTION: PRESSURE
SENSOR: KAVLICO (select pressure that you purchased, or planning to purchase; example KAVLICO 5 PSI FLUID PRESS (101715-000))
NAME: CUSTOM (you have 6 characters - example, FUEL2)
1d SAVE, EXIT
Now you've got the pin set up to be connected to that particular sensor.

Part 2 - set up the ranges
SETUP MENU > EMS SETUP > SENSOR SETUP > (select the name you chose in part 1 - example FUEL2 PRESSURE)

Part 3 - get the widget onto the EMS page
3a. SETUP MENU > EMS SETUP > SCREEN LAYOUT EDITOR > (choose your EMS page size) > SENSOR (button) > select the (new) sensor you want to appear on the screen.
3b. Move it around on the screen using the cursor controls.
3c. Push the STYLE button repeatedly to change the style of the widget.
3d. Push the SIZE button repeatedly to change the size of the widget.
3e. Push the SAVE button, then the EXIT button.

Wow thanks Dynon, that looks like instructions any fool could follow. This fool will take a stab at it tomorrow, looks like some new territory for me to explore.

Wow Dynon, that was such great instructions it made doing it actually fun! My Skyview was furnished by Vans and had lots of Rotax junk on it, I am not using a Rotax. I even found out how to change that as well. Some very powerful options for user input is part of that Skyview.
