Is there any way of checking whether the pitch sensitivity is too high/low as it appears to move much faster up/down than air driven gyros ?

No, there is no pitch sensitivity adjustment. The marks on the screen represent 5 and 10 degree increments, and you should be able to verify this with a level.
It is true that we are more sensitive than a lot of other instruments out there (and less than others). The mechanical ones are nowhere near as accurate as we are, so they make them move less
