I am about to connect dual sky views to the vp-x however I am confused as to whether I use the twisted pairs from the D37 harness and join them together from both displays and take a single feed to the Vp-x or splice a connection from the D37 harness to 3 core shielded cable, do the same for the other screen and then take this shielded cable to the VP-x. Is the shielded cable necessary?

I'm not quite grasping the visual from your description. But here's what's important: BOTH displays' serial TX wires should be wired to the VP-X's serial RX, and, BOTH displays' serial RX wires should be wired to the VP-X's serial TX. It's almost never bad to shield, but strictly speaking, it's usually not necessary for RS-232 serial connections. Hope that clears things up.

I just did this on Sunday.  There is a detailed diagram on the right hand side of page 32 (the diagram on the left side is schematic) of the VP-X installation manual that shows the wiring.  I took the 3 wire from the VP-X to the PFD D37 and spliced in the connection to the MFD D37 from there. I used solder sleeve connectors to splice in the wires (inside the PFD D37 shell).  Note that only the two RX and TX wires need to be spliced in for the MFD, and the serial ground is unused. Of course the shielding needs to be connected together as well and grounded.  The serial ground only needs to go to the PFD on Pin 22, again I used a solder sleeve connector here since a wire needs to be brought back to ground.  The diagram looks daunting and I bet I studied it for an hour before I started doing anything.
