I am starting with a clean install. I have typical cables and pulleys for my controls. I know the travel of the capstan should be set up to max out at 150°. Typically how much travel in inches is needed for normal operation?

It will ultimately depend on the the airplane - you'll need as much travel as the cable moves from stop to stop when you move the controls. In a Glassair Sportsman, for example, it's probably 4-6 inches (sorry that's not too precise - I'm going from memory).
