It depends if your airplane wings are level or not. The ball must be centered when the wings are level.

You should verify that it's not actually a bit of rudder trim that is needed, rather than a shim on the ADAHRS.

To be honest, the aircraft should be on the ground and leveled using the proper points for the aircraft in question (ie canopy rail, longerons etc). With the aircraft perfectly level only gravity can work on the slip/skid ball and it may be shimmed. I do this in the hangar with jacks and a level for the highest accuracy.

This is the only way you are 100% sure the wings are level.
