Currently, when I rotate the map knob clockwise, the map zooms out - can I reverse the function of this knob - I would like the map to zoom in when the knob is rotated clockwise?

There is not a way to change this.

Using a knob as "range" (which means rotating it clockwise increases how much is shown) is an aviation standard so we tend not to deviate from that.
