What is "custom engine sensor definition via a custom .SFG file"? By downloading 5.1, will it change
my EMS diplay, limit colors, presentation on the Skyview? I do not want to start over.

If you had made one of these, you would know what it is. Updating to 5.1 will not change your settings.
