We have just fitted D180, AP74 and so far only roll servo. The D180 is seeing the roll servo as the pitch servo, How can we correct this please ?

Can you redo your AP Servo Calibration to see if that fixes the problem?  During the calibration process, the type of servo is assigned based on the movements of the control stick and the changes in the readings from the servo.  If the control stick wasn't moved according to the instructions, the Dynon could assign the wrong type to the servo.
The other thing that might affect it is if the wiring is incorrect and its not getting a correct signal from the servos.

So the servo are interchangeable, and during the setup the D180 will automaticly know where the servos are physically located? Is this a correct assumption? Because my harness isn't labeled pitch or roll.

Yes, that is a correct assumption.  The servos are interchangeable, and setup determines which is pitch and which is roll.
