decimal places displayed?

Is there a way of adjusting the number of decimal places displayed on the EMS widgets?

i’m thinking in particular of fuel flow in liters.

No, the resolution is set at 0.1 for Gallons and 1 for Liters. The accuracy of both is the same, and is the accuracy of the fuel flow sensor. While the resolution is 2.5 times finer for Gallons, Liter units still matches accuracy pretty well.
