Can the dimming output from Skyview drive an external device without an external rheostat? ( Provide a signal that is proportional to the auto dimming )

The dimming output from SkyView is an open collector to ground (a switch to ground). It is PWM'd proportional to the dim level of the screen, and is at about 120Hz. It's not a voltage output, but with a few resistors and capacitors it could be.

It's designed to dim a light or LED directly. If you are trying to dim another piece of avionics with this signal, it all depends how that device uses the dim signal as to what you'd have to do to make it work.

Can you recomend a LED that can be connected directly to the output and how many could be driven

We can't really recommend an LED given there are literally hundreds of thousands of them out there, of all shapes, colors, sizes, and brightnesses. What are you trying to do with this dimming output and the LED hooked to it?

How many you can hook up depends on the LED chosen.

Trying to add 2 or 3 LEDs to iluminate a switch panel that will dim in conjunction with the Skyview auto dimming feature. Looking for basic info on voltage curent ratings.

Any LED that you would use to illuminate something in your plane can be hooked to SkyView. Hook it up like the manufacturer tells you too, except hook the ground side to SkyView's dimming output. It will then dim with SkyView's screen.
