I noticed an EMS page (MMarien) that had a really nice layout of round dials coupled with a few that were just an arc - about 90 degrees compared to the usual round one that is about 300 degrees of a circle.

How do you do that? It’s really cool.

I want to use arcs so as to get my main parameters in a common vertical scan layout across all EMS pages.

That (in order) is rpm, map, fuel flow, fuel pressure, oil pressure and alternator volts.

The secondary stuff is oil temp, coolant temp, EGT’S.

followed by fuel quantities, etc.

I’m trying to arrange things in order of what will kill you quickest.

Have you toyed with the style and size settings in the EMS page configuration?

Some of what you saw from MMarien was custom changes to the configuration files, as mentioned in his posts.

As RayInGA mentioned, what you saw were custom changes to the widgets (gauges) with a text editor. I wrote some documentation. It is becoming outdated with the new HDX layouts but for the most part it is still relevant. Attached is a PDF file.
