I would love to see an option that allows users to purchase a second screen for co-pilot that simply plugs into the main unit. This would really be nice and should be easy and inexpensive to do. It would also eliminate the installation expense of a second unit as well. This option would be great for most avionics, but especially the EFIS.

I love aviation!
Though it would ease installation time and effort, you would potentially lose redundancy, which one reason for having dual screens.
Wiring/soldering the serial inputs to both my SV harnesses was certainly tedious (most of a day) but knowing that both screens are fed independently from the various sources (audio, xpndr, gps, etc) provides peace of mind.
There are products on the market (mentioned in another thread) that can help ease the wiring pain, as well.
