Hi, I am installing a EMS D10 using my existing CHT and EGT sensors. Is it permissible to cut the Dynon CHT/EGT harness to reduce the amount of spare wire. I do not want to cut the actual sensor wires as they look very fragile and are soldered into their connections which I can easily use to join up to the Dynon harness.

Cutting the Dynon harness wires (brown covering) is acceptable & I do it on every installation without any issues ;)

If you're referring to the Dynon CHT/EGT harness, the brown unterminated thermocouple cable, yes you can cut those to the preferred length.

In shortening the brown wires, is there any disadvantage to cutting out a section and splicing the ends with quality stakeon connectors, insulated well of course, as opposed to cutting the extra length off the ends and refitting the nice bayonet type connector attaching the brown wire to the braided CHT or EGT wire? thanks

In thermocouples and thermocouple wire (typical CHTs and EGTs), the fewer junctions, the better.
