Is there anyway of loading the D100/120 software onto a laptop or any way short of buying 2 spare units of putting together some sort of simulator

Unfortunately, no. Nothing inside the EFIS runs anything that looks like a PC, so none of the software will run on a PC in any way.

Have you thought about producing a simulator I think there would be a market for it

We'd love to have one ourselves, but haven't been able to dedicate the required resources to developing one.
