With a dual screen sv setup do I need to instal two sv-gps-250 receiver antennas, or is one sufficient?

Bear is correct - one SV-GPS-250 is fine, just be sure to run all four wires to each Display in the SkyView system, and set each display up for SV-GPS-250 (preferably on Serial 5).

Only one is needed as long as the serial connections go to both screen.  (all serial connections should go to both (all) screens.

It ensures that you still have a GPS source (assuming you have no other device feeding SkyView - like an aviation portable or panel mount GPS) if the SV-GPS-250 itself fails.

Or a second GPS on the bottom of the plane so that you always receive signal even when inverted. :)

Figuring if I wanted a second GPS, I'd need/want a WAAS/IFR certified GPS I didn't go with a second Dynon GPS 250. I'll go with a Garmin 430 or the like. As of now a G496 does just fine as the backup I just can't file /G.
