Is a thermocouple polarized?

In other words does it matter what wire goes to what pin the EMS module?

Yes, the are polarized. Hook them up backwards and the displayed temp will decrease when the real temp increases.

They are also not normal wire. You must run thermocouple wire all the way from the probe to the EMS module.
