I am installing a SV HDX 1100 and would like to install both a Garmin 430W and a Garmin GTR200. what are my options? Can I listen to both and control my mic on the control stick?

Not by itself, no. The HDX only has the capability to output audio alerts. There is no headset or mic connection on the EFIS. You need an intercom, audio mixer or an audio panel to hear those alerts or to listen to radios. Keying a radio from a control stick has nothing to do with an EFIS. The mic switch on your stick would key the radios, either directly or through an audio panel. Keying the radio directly from the stick means that one mic switch would key one radio. You'd need two different mic switches to key two different radios. But if you use an audio panel, or a custom radio selection switch, you can use that to select which radio is keyed by a single mic switch.

Exactly as Rhino said.
I just did this for a customer on the last RV I installed SkyView in.
The Dynon intercom has two com inputs. I used a DPDT switch to switch the MIC HI and PTT for the com selected, and two switches to select either or both audio inputs into the intercom.
