I'm finalizing the layout of my instrument panel and was planning to mount two USB ports, one for each of two D700s. Do I have to have two ports or will the D700s sync updates, etc between them if I had only one port?

I believe you'll need the 2 usb ports for firmware upgrades.

If you use an Ethernet cable between the screens, they'll update databases.

Yep - mount a port for each display. Only the internal databases are sync'd via eithernet. If you opt to purchase charts (a new feature coming in 7.0), for example, you'll need to have a USB stick per display. Software updates are also installed per-display.
