I would be checking the shear pin in the roll servo. It will still have enough friction to feel ok on the ground, but won't have enough to drive the ailerons in flight. Worth a try...

During the two yearly check, the altitude of the EFIS is compared to the altitude on the pitot static test set. If it is incorrect, the ALTADJ in the EFIS setup menu is used to make them read the same. This also adjusts the gray code output to suit.

Could be air in the oil pressure line to the sensor. This might cause the rising oil pressure to compress the air in the line and spike the sensor. Sort of like water hammer in your water lines at home when you turn a tap on and off with air in the pipes.
