I'm curious as to why the menu item would be grayed out. I don't recall seeing this before. I get no messages while flying that the transponder or ADS-B out isn't working. I've not flown behind the panel enough (very new install) to know if I'm getting weather indications (i.e. radar shading) or...

Seems you're talking ADS-B in. Have a look at the Dynon Installation guide. You can download it here:
https://dynonavionics.com/skyview-documentation.php. Section 14 outlines a few things that you MUST have to get reliable ADS-B in.
1) A dedicated antenna.
2) The guide also says, "Although weather and TFR information (FIS-B services) are available any time the SV-ADSB-470/472 is in an ADS-B ground station coverage area, ADS-R TIS-B traffic is only available if a SV-XPNDR-261/262 with ADS-B OUT capability is installed and is providing ADS-B OUT position reports into the ADS-B system."
* Taking note the last sentence. Do you have a SV-XPNDR-261/262 installed or are you using another brand? If the latter is true, I'd ask Dynon if the install guide was being specific about that point.
So, to point 2, in order to be a "participating" aircraft, you must also be giving a good ADSB-out signal.
You can find out if your ADS-B out signal is good or not.

You'll get a report emailed to you. It's kinda cool, very geeky, but has the information on there to help you determine if our "out" is a factor of your "in" problem.
Aside from those requirements, a good ground plane is necessary for your antenna. If this is on a fully metal airframe/skin then that's not the issue.
Then there are the integration pieces.
Check your serial inputs. When my Avionics shop came to do my Transponder/altimeter check, i am almost certain they changed a serial setting unawares.
