Just noticed the Dynon online store shows "out of stock" for most of the components I need to finish out my avionics package. Has anyone heard anything about this? Is this because of the microchip shortage? Have there been any estimates for when their supply chain will return to normal?

Have you tried Aircraft Spruce for those components? I ordered 2 HDX screens a couple months ago and received them the same week from their stock (not drop-shipped).
Just so you know:
I been in touch with 2 different people now about this. And, I'm happy to report that my concerns were unfounded. Dynon does not appear to be out of stock on anything I needed, except the EMS sensor kit for 4 cylinder Lycoming. And, I've been told that they expect to ship that in 2 weeks.
The first contact was a sales/marketing rep on Dynon's FB page who assured me that the webstore's "out of stock" listings were not accurate. The second was an authorized Dynon dealer who said he could get what I need shipped direct to me right away.
The folks at Dynon continue to be awesome!

Yeah, our web store was a bit out of sync with the real world from a previous moment when we were temporarily out of stock (it happens rarely enough with most products that we forgot to turn the out of stock alert off).
