The manual goes with the version of firmware. if you install 7.0, coming out this month, you'll want the manual for 7.0. If you are running 5.0, you'll want that manual until you upgrade, etc..

I had the same issues. Did everything. Do you have the EMS -A version? I had my EMS upgraded to the -A and the EGTs are none existent to rarely seeing the EGTs jump with PTT.

you'll need #22 for both. I recall the wires from the Probe for sure and maybe the EMS side, but in the end #22 worked for both sides, just splice enough off to get a 3 or so foldovers to assure there is a good amount of wire to grab onto when you crimp it.

keep in the mind the wires are very small, like 24, I used the 22 (red) and the wires came right out after I crimped it. I needed to fold it over 2-3 times than I used a Radio Shack connector and heat shrinked. It has actually held up without further issues.

Assuming the compass is calibrated try increasing the ROLL SENSITIVITY, see if that helps.
